Technical details
2020 Vintage – Hand picked grapes in trays. 35-40 days of skin contact. Spontaneous fermentation with skins. Base is aged 12 months in acacia barrels.
2021 Vintage – Hand picked grapes in trays. Draining without skin contact. Spontaneous fermentation. Blending with 2020 Vintage base during fermentation. Bottling at last stage of fermentation, after the fermentation is finishing in the bottle. Disgorged at the end of January 2022.
